Mallorcan Tumbet
Ingredients : Serves 4
● 6 Ripe fresh tomatoes cut into quarters
● Extra virgin olive oil
● 2 cloves of chopped garlic
● ½ tsp brown sugar
● 2 medium or 1 large Aubergines chopped into 1cm cubes or slices
● Small jar of roasted Red Peppers
● Fresh or dried herbs - 1 tsp each thyme and oregano
● Sea salt and black pepper
Delicious and nutritious with simple ingredients. A mallorcan speciality dish and so easy to make with layered roasted vegetables
Preparation - 15 mins Cooking - 45 mins
Preheat the oven to 200C/180C Fan/Gas 6
Arrange the tomatoes in a roasting tray and drizzle generously with olive oil. Add garlic, brown sugar and thyme . Place in the hot oven for 15-20 minutes. Check the mixture and shake the tin from time to time. The tomatoes are done when they are jammy and lightly roasted.
Add the chopped aubergines to the tomatoes with a scatter of sea salt and drizzle again with olive oil.
Roast for a further 15 minutes until the aubergines are soft and chewy. Check and stir about from time to time. Remove from the oven and set aside.
Drain the jar of peppers and add to the mixture. Sprinkle remaining herbs over the mixture.
Reduce oven to 180C/Fan 160/Gas 4 .
Bake for 10 minutes.
